    I am a long time Alaskan hunter.

    All bears have a fast digestive system - they do not get much nutritional value from fresh food.......... so they prefer food that is already begining to break down (rot). And when it comes to judging the flavor of meat - remember - all things taste like what they eat!

    Black bear is the easiest to take, and the best tasting - they dine on berries, roots, shoots, etc etc. mostly items that do not add a negative flavor to the meat.. You can slice the top of the rear quarter into steaks, a little marinade - throw it on the grill. Yummy!! It's tender like a good piece of beef - but - will be all meat and no marbling of fat. The bears keep their fat layers on the outside. The other cuts cook up just like pork.

    Coastal brown bears eat allot of old dead fish - and grow big - unless you can take a spring bear, expect a summer or fall bear to taste like rotten fish.

    Grizzly bears are a type of brown bear - just smaller - and these are found away from the ocean. The meat from these bears can be pretty tasty too - but - it depends on the bear. If you take one that has been eating roots, shoots etc - the meat will smell very nice. Take one that has spent the last two week chewing on a 4 month old moose - the meat will smell like a rotten tire.

    Polar bears are NOT edible. I knew a guy who took one in Canada and smuggled the meat back........ had his butcher buddy cut it up - the meat stank so bad the guy had to toss his $4700 professional meat saw away. No amount of bleach or boiling the parts could get the smell out of the metal. Worse, the live has so much Vitamin A - one bite is fatal to most humans.An exception are natives that have grown up eating this - they are genetically pre-disposed to being able to handle some of it.

    The Best Trophy bears come from Kodiak Island and Admiralty Island in Alaska. On these islands the streams are so full of salmon it's had to cross and not catch one between your toes. Over the past centuries the bears have developed into exceptionally large specimens due to the high calorie and high protein diet - a diet not available to other bears in North America.

    Either the Grizzly bear, Polar bear, or interms of best of all time, then the Short Faced bear, which went extinct after the Ice Age (thank god).

    If you mean to eat, any wild bear,less than 2 years old. For a rug, Kodiak or Polar. For claws any large mature bear. If you want the best game for meat, Caribou. They taste better than beef.

    here in Oregon we can legally harvest 3 black bears a year and they are great. We make salami and peperoni out of them. If they had antlers I would quit hunting deer.
