    pasta with tomato sauce:

    Ingredients

    2 x 330g/11½oz tin chopped tomatoes

    500g/1lb 2oz dried pasta shells

    45ml/1½fl oz/3 tbsp olive oil

    2 cloves garlic

    2 shallots, finely chopped

    ½ red chilli (optional)

    30ml/1fl oz/2 tbsp tomato purée

    2 sprigs fresh thyme

    salt and pepper

    1 tsp cumin powder

200g/7oz buffalo mozzarella, cut into pieces

    50g/1¾oz rocket

    10 black olives

    10g/¼oz torn basil leaves

    Optional Garnishes:

    pesto

    basil or mint

parmesan, mild cheddar or cheese slices

    extra virgin olive oil

    Method

    1. Cook the pasta according to the instructions on the packet.

    2. Warm the olive oil in a pan with the garlic, shallots, tomato purée and chilli if using. Season.

    3. Once the flavours have infused, add the tinned tomatoes and simmer gently.

    4. Add the cumin, mozzarella and olives and stir. Continue to simmer gently until the cheese starts to melt.

    5. Add the rocket and stir the sauce, just long enough for the leaves to wilt but retaining their colour and some of their texture. Add seasoning.

    6. Pour over the cooked and drained pasta and mix together. Serve with garnishes. Add an extra drizzle of extra virgin oil and serve with garlic bread

6 cloves garlic, chopped in small pieces

    1/4 large onion, diced

    2-3 chopped basil leafs

    few sprinkles dried thyme

    1/3-1/2 box angel hair pasta

    Directions:

In a medium pan, pour about 1 tablespoon of the olive oil in the pan on medium heat. Add the onion and while that is cooking take a large pot and add water to bring to a boil then add the pasta and about a tablespoon of olive oil.

The onion should cook 1-2 minutes. Then you add the garlic. So the garlic should turn a golden brown in about 3-4 minutes, when this happens add the tomatoes, Remember to have some juice or the sauce will be to dry, add the basil and thyme.

Next you check the pasta to make sure its cooked fully threw, then drain it. Portion how you like and add the tomato, garlic sauce and enjoy!

Ok, this isnt a tomato sauce but it is so delicious.

    My take on Pasta Caprese

I like the bowtie pasta for this but you can use anything you like

    3-4 roma tomatoes

    1 bunch of fresh basil

    1 package mozz cheese

a few cloves of fresh garlic *to tase

    salt/pepper

    olive oil

*put the cheese in the freezer while boiling pasta

    chop tom, basil and garlic

once pasta is done add a dash of olive oil and then the garlic and basil mix well. Finally add the tom. Take the cheese out of the freezer and cube it into small pieces. (you do it while its frozen so that you dont end up with cheese globs all over in your pasta, the idea is to have bite size pieces of everything, nothing melted all over, so if it's frozen when you put it in the hot pasta it will melt slightly and be so delicious) toss it all together, salt and pepper. your good to go

one really easy one that i love is to just cook a portion of pasta then stir in a few tins of chopped tomatoes and add a bag of fresh spinach (the spinach shrinks), it is really yummy, and good for you too!
