Frozen vs. Fresh Vegetables?
Do vegetables lose nutritional value if they are frozen? If so, how nutritious are they compared to fresh vegetables?

On the contrary. Canned and frozen fruits and vegetables are processed within hours of harvesting which means they retain most of their nutritional value. Fresh produce tends to lose some of its nutritional value due to the fact that it takes days to get to your local grocery store. Take into consideration that we get a lot of produce from California which means it travels by truck to a warehouse and then from that warehouse it goes to your store. So there's 2-4 days right there. We also get a lot of produce from other countries and it either travels by plane, train or boat.

It all depends on preparation... because frozen veggies are precooked to quickly to really lose that much nutrition. If you stir fry, either will keep a lot of their nutritional value... and if you boil, they will lose a ot of it.
