Wouldn't a meatloaf pan with the drain holes drain out all the grease but then cause it to smoke in your oven?

I've always been bugged by the idea that you have to drain out all the fat while making meatloaf so that it doesn't get absorbed into the loaf. Now I've heard of these meatloaf pans that are two pieces - one part that has drain holes which allows the fat to drip down into the lower pan. My question is - wouldn't that grease then start to smoke something fierce in your oven?

I have a propane stove, too. Hoping to get some answers from people who know and love these pans - seems like a great idea! Just kind of skeptical! (I also have not been able to bring myself to trust silicone bake ware.. but that's another question for another day I guess).

Update:

I do use lean ground beef and I'll add either rice or umm.. cracker crumbs.. corn flakes.. etc, but you still get some of that fat from it no matter how lean it is

    I have one of those loaf pans and love it for meat loaf. It does not smoke in your oven. I use lean ground beef.

    If the grease is not already going to smoke from being around the meatloaf, it's not about to smoke from being caught in a lower pan.

    That said, if you're draining a ton of grease from your meatloaf, it just means you're not using lean enough ground beef, or you haven't added any starch like rice or oatmeal, which makes it not exactly meatloaf. My dad's meatloaf never has grease to drain...I think he uses beef that's around 10% fat, and a handful of rice.

    I've used broiler pans in a natural gas stove, which is the same principal as the meatloaf pans you describe, and the fat does not smoke if it stays in the lower pan. They're great for making burgers and chicken thighs, which you do want to drain the grease from.

    I've never seen such a thing but I do like the idea. I usually just form the loaf and put it in a oven proof fry pan and bake it that way. The grease goes into the pan but doesn't get absorbed back into the meat.

    I have not used one, but the concept - I like. It wouldn't start a fire because the pan is catching the grease. I am going to assume there is several inches between the two pans, capture the grease so it won't smoke. I would use one, think I will have to get one.

    ive never herd of sutch a pan but ive been cooking my meatloafs in a cast iron skillet they come out fine and the excess grease doesnt get absorbed into the meatloaf beside that grease your refuring to is ussually added to make gravy why would you want to disgaurd it thats all the flavor and ive been cooking for years and have even ran a restaurant kitchen with no coplaints as to the grease smiokin only if it got on your burner of oven heating element

    I form the loaf in a loaf pan and then take it out and put it on a cooling rack over a cookie sheet. I use lean beef/ground chicken mix, doesn't have much fat.

    Try 97% lean ground turkey. To two pounds add one cup italian bread crumbs one chopped onion and one chopped bell pepper. season to your preference and add one half cup catsup. Use a loaf pan with no drain holes and bake as usual.

    Don't cook the greasy meat! it's unhealthy. Make a soy loaf!
