A good Kosher Hot dog is one of the best, because it's made out of the best parts of the cow. It's not all left overs. A crunchy casing is important. It's also important to either steam or grill them on low. I like to grill in a hot pan with some butter to help crisp up the casing.
And don't use too many condiments! Just makes the bun Soggy. Unless your going to a place that's known for putting the best condiments on it, leave it to mustard, and maybe one other topping (relish, onions, jalapenos, etc).

If yer talking about the weenie itself, it's the casing and the seasonings. My preference is a saugy from Rhode Island. If, however, yer talking about the whole enchilada, it's gotta be a simple, griddled, cheap weenie, served in a steamed bun, steamed almost to the point that it stix to the roof of yer mouth, and topped with cheap yellow mustard, chili and onions. The finest specimen of this 'best hot dog' can be found @ the Roast Grill in downtown Raleigh, NC, USA. They serve only hot dogs, sodas, beers and pound cake or baklava--no chips, no fries and whatever you do, do not ask for ketchup or you will be shown the door.

I think the casing makes the dog! I like the hot dogs casings that have a snap when you bite into them (and very juicy) I believe Kayhem in natural casings is a good one (I find it's best to get hot dogs in the deli not pre-packed) Ask for all beef dogs.
