I love cajun spiced black beans with tomatoes.
Cornbread with bits of corn in it would be so good with it. Does anyone have a recipe that they tried and liked?

jiffy mix is not vegetarian!
INGREDIENTS: WHEAT FLOUR, DEGERM-INATED YELLOW CORN MEAL, SUGAR, ANIMAL SHORTENING (CONTAINS ONE OR MORE OF THE FOLLOWING: LARD, HYDROGENATED LARD, PARTIALLY HYDROGENATED LARD), contains less than 2% of each of the following: BAKING SODA, SODIUM ACID PYROPHOSPHATE, SALT, MONOCALCIUM PHOSPHATE, NIACIN, REDUCED IRON, THIAMINE MONONITRATE, RIBOFLAVIN, FOLIC ACID.

Enjoy the wholesome goodness of my world famous cornbread with carrots:
1/2 cup unbleached all-purpose flour
1/2 cup whole wheat flour
1 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 cup low-fat milk
1/2 cup maple syrup
4 tablespoons butter , melted
2 large eggs
1/2 cup wholesome carrot puree
Preheat the oven to 425°. Spray an 8" x 8" square pan or 8" round baking pan with nonstick spray.
In a mixing bowl, whisk together flours, cornmeal, baking powder and salt until well combined. In a separate bowl, whisk together milk, maple syrup, butter, eggs and wholesome carrot puree. Add the liquids to the flours and stir until just combined.
Pour the batter into the sprayed pan and bake for 20 minutes, until lightly browned.
Test the center by sticking a cake tester (or a kebab stick) into the cake. If it comes out clean, the cake is done.

I always use Jiffy mix. I use two boxes and follow the directions on the box, except I leave out 1/2 of the milk and add one small can of creamed corn and a 1/4 cup of sour cream. If you like a little spice, you can add a few drops of hot sauce to the mix.
Bake as directed and you can even add some shredded pepper jack or cheddar cheese on the top.

I buy Martha White Sweet Corn Bread Mix. It says, "just add milk and eggs!", which of course wouldn't make it vegan, so I use water for the milk and just don't put in any eggs. It tastes good, but it's a bit crumbly. If you had vegan egg substitutes, that would probably help, but it's not completely necessary.
"hlkljgk" is right. None of the jiffy mixes are vegetarian. Every single one (muffins, biscuits, etc) has lard in it.
