You dont stir the sand in the tank, just imagine, in the river of the amazon, a guppy swims happily then all of a sudden this huge hand comes down and stir up the river, do you think this is appropriate? no it is ot, it will destroy many wildlife living amongst the sand.

You don't have to daily, but a couple of times a month is a good idea.If you don't the sand will become compacted, and hard as rock.I would consider getting a 10 gallon, bare bottom tank for your fry.2 1/2 gallons really isn't enough room for them to grow properly.
Here is a pic of my 10g when I use to keep guppy fry.

Edit:
I keep Malaysian Trumpet Snails (MTS) in all my sand, and planted tanks. They bury themselves in the sand and sift it so it does not become compacted. The problem with adding them to a 2 1/2 gallon tank is that they do reproduce, and in a tank that small, the bio load will become a problem.

You don't stir up your sand every day... That's ridiculous. Imagine that with a big planted tank, or a big reef tank.

So huge? I think they are fries, therefore, just a small tank with plants can...
If the tank is huge, they may find it difficult to find food and therefore, DIE!
So, just get a small tank and change its water every 2 days.. This way, they grow better.
