my wife brought some sweet potatoes and does not know what to do with them reciepes please?

    Scrub down w/ scrubbie sponge. Poke all over w/ fork 12-15 times. Put 2 in microwave oven for 8 minutes. You will hear them singing to you when close to getting done. (if you do not have a turntable, turn them over half-way thru cooking.) Squeeze (w/ pot holder) to see if they are done. If soft, remove from m/w oven, slice open, and serve w/ butter, cinnamon-sugar, maple syrup, molasses, cheddar cheese, S&P, marshmallows, whatever you like!

    Savory Sweet Potatoes

    3 cups cooked sweet potato (8-10 fresh or 2 [29-oz] cans; not BRUCE brand-ick!)

    ½ stick real butter

    3 strips bacon

    1 small onion, chopped

    1½ cups grated sharp cheddar cheese, divided

    Salt and black pepper to taste

    Preheat oven to 350ºF. In 9"x13" casserole dish, coarsely mash potatoes and butter with fork. (works best when potatoes are hot.) Fry bacon and drain well, then chop it. In bacon drippings, cook onion until clear. Add bacon pieces, onion, 1 cup cheese, salt, and pepper to potatoes, stirring with fork to combine all. Spread out evenly in pan.

    Top with ½ cup cheddar cheese. Bake for 20 minutes.

    Butter Pecan Sweet Potatoes

    8 med. sweet potatoes (5 lbs.)

    2 Tbsp. olive oil

    Kosher salt

    2 Tbsp. cold butter, cut into small pieces

    2 Tbsp. light brown sugar

    1/3 cup pecans

    1/8 tsp. cayenne pepper

    Preheat oven to 400ºF. Peel potatoes. Halve lengthwise, slice crosswise into ½” thick slices. On a baking sheet, toss potatoes w/ olive oil and salt. Transfer half the potatoes to a 2nd baking sheet. Bake until tender about 25-35 min., tossing occasionally. Toss potatoes with butter, brown sugar, pecans, and cayenne pepper, dividing evenly between both baking sheets. Bake again until sugar is caramelized and hard, about 10 minutes. Gently toss and serve. Serves 8.

    Sweet Potato Corn Bread

    "This corn bread bakes to a deep golden color with flecks of sweet potato visible. It looks a s good as it tastes."

    INGREDIENTS

    2 cups all-purpose flour

    2 cups cornmeal

    1/2 cup sugar

    7 teaspoons baking powder

    2 teaspoons salt

    4 egg, beaten

    3/4 cup milk

    1/3 cup vegetable oil

    2 2/3 cups mashed cooked sweet potatoes

    DIRECTIONS

    In a large bowl, combine the first five ingredients. In a small bowl, combine the eggs, milk, oil and sweet potatoes. Stir into dry ingredients just until moistened. Pour into a greased 13-in. x 9-in. x 2-in. baking pan.

    Bake at 425 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cut into squares. Serve warm.

    I like them best baked with butter. They are harder than white potatoes and need to cook longer. Just test with a fork or squeeze to tell when done.

    Ingredients

    sweet potatoe fries

    2 large unpeeled sweet potatoes (about 2 pounds)

    1 T olive oil

    1 t ground cumin

    1 t ground coriander

    1/4 t black pepper

    Vegetable cooking spray

    Directions

    Clean potatoes, cut into french fry strips (1/4-inch by 1/4 inch). ( i sometimes make them big country style and peel them) Combine oil, cumin, coriander, and pepper in a large mixing bowl. Add potatoes and toss well to coat. Arrange on a single layer on a baking sheet coated with vegetable cooking spray. Bake at 425degrees for 15 minutes. Flip potatoes over, and bake for another 10-15 minutes until browned.

    Notes:

    - Flavor is best if potatoes are well coated when tossing with oil and spices.

    - When spreading the potatoes on the baking sheet their sides can touch, but its best if they don't overlap.

    I recently discovered this great combination. it is soo delicious.

    I simply bake a few sweet potatoes and wrap some leeks (whithe part only cleaned and sliced lengthwise sprinkled with a spritz of extra virgin olive oil and a tad of kosher salt) in tin foil tightly sealed. Place all on a baking sheet or pizza pan and bake at 400 F for one hour. Actually leeks will cook faster so add after 15 min or remove earlier.

    Remove from heat. Scrape sweet potatoe from skin. Cut up leeks with kitchen sisssors and mash together.

    perhaps you could stuff filo pastry with it for more elegant presentation but it tastes great. IN Fact I am eating it right now and have stocked up on leeks to make it again.

    I made this one up and I make it every winter. It's great comfort food.

    You can use any combination you like of: Sweet potato, pumpkin, potato, carrot.

    Boil them until soft.

    Put in an oven dish with a dollop of Philadelphia and some butter.

    Mash roughly.

    Grate some nutmeg and crack some black pepper and salt into the mix.

    Pour in a dash of milk and mix.

    Evenly distribute in the dish and cover with grated bread or breadcrumbs, some chopped parsely and some cheddar cheese.

    Bake in the oven at 180 degrees until golden and crispy on top.

    Cut the sweet potatoes into fries. Don't peel. Mix together olive oil and balsamic vinegar. Mix the sweet potatoes in the vinegar mix. Lay on a cookie sheet and sprinkle with dried rosemary. Bake at 350 for about 40 minutes.

    sweet potato fries just like french fries

    wrap in foil and bake like a russet serve with butter and cinnamon

    sweet potato pie

    boil whole potatoes skin on until fork will pull out easily

    allow to cool to touch and peel away the skin mash the pulp

    and add instead of pumpkin in your favorite recipe

    cube peeled raw and roast with white potatoes, carrots, celery and onion with a pork roast

    boil as for pie above only cut into bite size pieces place in baking dish top with about 5-6 pats of butter sprinkle with cinnamon and 1/2 brown sugar and 2 cups mini marshmallow bake until toasted on top 400 F

    sweet potato soup( with boiled as for pie ) pureed then simmered with cream, nutmeg, butter and cinnamon

    or just mash cooked potato with butter and a little milk or cream and cinnamon

    Here is a good and easy recipe you have to bake the potato in the oven for about 1 hour then put a fork in it to see if it is done,then you cut it in the middle and put some butter and brown sugar in it.

    Add them into a stew about 10 minutes before the end of cooking, so they just cook through - it adds some nice sweetness! Or just boil it and mash as you would ordinary potatoes - you can also add a bit of grated ginger which is good in it!

    Well she can bake a couple of them for about 45 minutes, until they are bubbly, take them out and put butter in them. Just like you would a baking potatoe. Or she can make a sweet potatoe pie...............she and you both can visit recipezaar.com or recipeland.com for more recipes.
