    My Fav:

Stuffed mushrooms. I buy pork sausage and stuff the mushrooms and bake them for about 30 min at 350.

    Spinach artichoke dip:

Frozen spinach, 2 packages of cream cheese, 1 can of artichokes, 1/2 C mayo, Salt n pepper to taste. Mix all this together. I usually get a bread bowl and cut the inside out and fill the bowl with the artichoke mixture and bake for about 45 min at 350.

It's not exactly a recipe but just a shortcut to some fun and fancy-looking starters. If you can find an H-mart or an asian supermarket near you, you can buy pre-rolled and pre-cut dumpling skins for wrapping. If you take these and use them to wrap apples, bananas, shrimp, pretty much anything, and deep fry them, they look and taste like puff pastry. You'll probably have to do a little more flavor tweaking with the skins for sweet treats, confectioners sugar will probably do the trick.

... of course you could always go the regular dumpling's route but that's no fun. You could also do pot stickers with frozen dumplings, they don't have to be the pot sticker kinds, and make a quick easy sauce with soy sauce and vinegar, and honey and sesame seeds if you like sweeter tastes.

    * for pot stickers you just need to heat your pan with a little oil, place your frozen dumplings in, add a cup of water or enough so that the dumplings are submerged about half way, cover, and wait until the water dries and the bottoms crisp.

for more sweets you can do chocolate dipped fruits.

One thing I like to do that wins rave reviews is what I call LBBs (Little Bitty Burritos). And, they're really not much work at all. I just chop up some grilled chicken (like a rotisserie chicken you can get at the grocery store or Costco), get some refried beans and some shredded cheese, and maybe do a shoulder or pot roast for a beef variety if I'm feeling adventurous. I then heat up the ingredients (except the cheese), and twist up beef, chicken, and bean & cheese burritos using those little 7-inch taco size flour tortillas. As I finish each one, I wrap it in foil and write a B (beef), C (chicken), or BC (beans & cheese) on the foil to identify them. You could also put them into separate foil pans and label those instead. I then cover the pans full of wrapped burritos in foil and can leave them in a warm oven if I want to keep them hot. When I serve them, I set them out with a bowl of salsa and maybe guacamole. They come out about 4 inches long and make perfect finger foods (kids especially love them). And, people appreciate the variety and have to have at least one of each.

Okay, this might sound just like a little snack, but they are greattttt for appetizers.

Triscuit crackers on a tray, with a little piece of chopped tomato and a piece of cheese on top of the tomato. Put it in the oven for a couple minutes, and watch the cheese melt. When the cheese is melted, take them out and enjoy.
