Any good ideas for a filling for potstickers?

I bought some potsticker wrappers (look like wonton wrappers, but they are round) and need to find a good filling to make them with. My family isn't big on Chinese flavors, so maybe something with a twist? I have chicken breasts I can shred for the meat portion.

    cream cheese and crab meat and scallions would be great..

    or you could just do pork w terriyaki sauce and sallions and fill it with that/..theres so much you could do..

    I make the best potstickers. Here's what you need:

    1 lb Ground chicken breast (you can grind your own in a food processor if you need to. Shredded cooked chicken will not work right).

    1 tbsp garlic

    1 tbsp grated ginger

    1 tbsp chilli-garlic paste

    chopped green onions (lots)

    finely chopped cilantro (lots)

    finely chopped peanuts

    splash soy sauce

    black pepper

    1 egg white

    Optional: finely chopped red bell pepper and/or carrots

    Mix all together and spoon into wontons, fold, steam for 7-8 minutes. Toss with sesame oil.
