stereotypes truly a precept to hate?

I understand that hate is a horrible, despicable, consuming thing. I do, however, see the existence of stereotypes within subcultures, races, etc... For instance white people tend to be a little more uptight than other races... I am giving that as an example since I am white.

So why when you express a belief or sentiment about the stereotype you are automatically then a racist or a bigot. I have known people of several races, religions, or cultures, and have found an ability to get along with them great. I also see the generic stereotypes to a degree within them, as I also see them within myself. So why is the acknowledgment of the existence of a stereotype racist?

Racist is the harshest word to describe some of these actions, but prejudging people is something that all humans do-its a survival instinct. If you eat a yellow plant and get a stomach ache, something has to stop you from experiencing the pain, so your instinct tells you that all yellow plants are bad, even though in some cases you're being overly paranoid (just don't eat the yellow plants with the bugs on them, the rest are fine).

The problem is with the danger that people will take stereotypes which do apply to only a portion of a group, and they will apply those characteristics to the whole group. In the past, human beings have done terrible things to whole groups of people based off of a stereotype which truthfully was a little bit true, but not completely. Nipping the whole situation in the bud at the first hint of stereotyping, at its most harmless stages, gives people piece of mind that no one will ever get to the final stages of racism, which are often very violent.
