You must use cold cooked rice - using hot fresh rice will result in a gooey blob. Use whatever vegetables you have on-hand.
Scramble one egg and set aside to cool. Chop it up.
Always have everything you need ready beforehand because this goes really fast!!
In a wok or large iron skillet:
Heat to very hot and add a couple of tablespoons of peanut oil (vegetable or olive is OK but peanut tastes best)
Then add:
1 cup of chopped onion and stir a minute
at least 1 tablespoon garlic and stir
1/2 or more c celery, chopped and stir a minute
a bit of green pepper, chopped and stir
three to four cups COLD cooked rice
1/4 c soy sauce and mix it all, constantly until well coated and the rice is heated through...then add
scrambled egg
You may also add bean sprouts and water chestnuts or any cooked meat.
1 c chopped green onion and stir for another minute and serve.

4 cups cold cooked rice
cooked shrimp as much as your desired>> chopped
2 eggs add salt n beat
1 or 2 finely chopped scallions
1 finely chopped garlic
1- 2 tablespoon light soy sauce
1- 2 tea spoon oyster sauce
Oil, salt, pepper, seasoning as needed(you can change seasoning with sugar.. using half tbl spoon or neither)
Heat the wok n put oil, when ready...pour egg n make scramble, set aside, add oil if needed. Heat n add garlic until get fragrant, add scallion n stir for a few moments with the scramble egg.
Add rice, stir for few momen, add the all sauces n spices, stir for a while n the last add the shrimp. Combine thoroughly in the high heat until ready.
Tips.
You must to use wok to get best taste n aroma. And cooked in high heat... but if you were beginner... just use medium heat while you cooking.
And if using high heat, sometimes you have to turn it into medium.... when you adding some ingredients.
Scramble the egg in high heat until the edges turn into little golden brown... for better aroma. You have to stir fast when you pour the egg into hot oil.
If you want to try ones, don't use the pepper, for me its more better than use it. But if you decide to use... you can put it later... heat n stir for a while.
If you like garlic taste more fragrant.... fried it until yellow or softly golden brown.
You can add other ingredients in to this recipe, like chicken, fish ball sliced, etc.
Also you can add tomato ketchup about 1 or 2 table spoon together with the other sauces. But you have to use pepper too.
This is one of my favorite fried rice recipes.

cook you rice about a day before, so it's pretty much like leftovers. then put it all in a pan with peas shrimps and corn and green beans. add some pepper and salt with a boiled egg cut into pieces. make sure all the peas and corn is cooked and only needs to be heated through.!
