You've got a pretty sweet choice for cars here. Both are really unique and have tons of upgrade options.
Both have their ups and downs. If I'm thinking of the correct rx7, they had a rotary motor in them. Very innovative and unique design for a motor, which can really make them hard to work on or find a shop that knows what they're doing. They're also super sensitive to heat, the number one upgrade for most Rx7 owners is a new/bigger/more efficient radiator and cooling fans.
Mr2s are definitely neat too. They have a mid-engine setup, with the motor right behind the seats. I'm also not 100% sure on this, but some mid engine vehicles kept the radiator mounted in the front. This poses problems because theres 20 or so feet of cooling hose which is a huge opportunity for leaks. It might also be a real pain to work on a mid-engine vehicle, i'm not sure how much room you've got in there to work.
In my opinion, pick up the rx7. They look better and have a big following for aftermarket parts. They might be a little less reliable, but as long as you keep the cooling system good, you should be alright. Plus if you do have problems with the rotary motor, I believe theres a v-8 swap you can do. Now that's a mean setup.

Well, I dont know much about the stats on the 2nd gen rx7, but its an ugly boxy thing compared to the 2nd gen mr2 ( SW20 ) Its small, rear engined and shaped like a ferrari. Its as nimble as hell. I cant say how much fun i've had in that thing. That are parts for both easily available and tuning places that suit both too.

strictly on personal opinion, I would choose the Toyota MR2, (turbo) due to its unique shape, mid-rear layout, lightweight, peppy car that is getting more and more rare to find.
I see a whole lot more RX-7's on the road than I do MR2's.
