Salted peanuts or raw spanish peanuts for my Peanut Brittle?

Most recipes call for raw... but I like roasted peanuts. The roasted peanuts seem to have more flavor (from the roasting) than raw peanuts.
So you can use salted roasted peanuts (you need to cut back on the salt called out in the recipe) or just lightly toast the raw peanuts on a sheet pan for about 10 minutes at 350 F.
Just make sure you're not using the dry-roasted peanuts with that powdery coating on it.

My mom always used raw spanish peanuts for Peanut Brittle. (I made it in the microwave one time and it was good.)

I would stick with the raw peanuts. You wouldn't have to think about the extra sodium. ( not good for you)

do some thing new like salted sounds like it would be good , just try all you might be very happy with all
