My one year old is and we are trying to adjust to a new diet. I am not really sure what to cook, and what the best way is to adjust our diet. We live in a small town so I have to make most things. Anyone know how to make bread she can eat that is not to heavy or dry? any help would be appreciated.

We avoided all of those with my oldest for a while. We have been able to add in only eggs.
My biggest suggestion would be to keep it simple. Stick to basic meats, fruits, veggies, grains. The more processed items you use, the more you risk cross contamination.
For breads my guys like corn tortillas. I make them fresh from finely processed corn meal and water. EnerG egg replacer works great in baking but the wheat free mixes do not come close to the soft store bought bread.

Look for gluten free foods to cook. I have celiac disease, and I cant eat wheat or flour. Because of the damage done by my celiac disease, it caused something similar to lactose intolerance.
Look up gluten free foods and organic foods. You are probably going to have to stick with all natural foods and possibly even order it off the net. There are different types of wheat free flour you can buy that makes excellent bread.
You can make most any meat as long as it isnt breaded. I can eat rice (not sure if your daughter can) so i love making hamburger steaks and rice with some chopped up fruit or veggies on the side. Beans are filling to eat when you have food allergies as well, but make sure to check the label.
Wheat free waffles are sold in some stores refrigerated section too, and they are my favorite breakfast!
Good luck!

There are numbers of websites that provide recipes, and also look under organic recipes also.
If you can find a farmer's market ? you 'll be able to buy bulk, corn meal, or powder, oat powder, barley powder, rice powder, and buy vegetarian protein powder w/o milk or eggs. Buy almond butter, cashew butter, soy butter. quinoa, noodles made wth rice, nut powder. And feed your child with wholesome rice, fried or steamed, rice pooding ? For your child needs good protein plus good fat as a year old.
When you find recipes you like go ahead and make several loaves of whole grain bread and freeze extras. cornbread is good but you have to find recipes w/o wheat. Organic sites are good at that. I myself have a family with food allergies of milk, eggs, whey, wheat, yeast, peanuts...It was an overwhelming challenge in the beginning, but I'd organized myself and it has become a joyful task now. I live in Tucson, and we have quite a few health stores plus a few local farmer's markets, which make my work easier. But as you discover these new websites, you 'll find many on line suppliers as well. Good luck on your new road ! :):} Adding : look for vegan bread recipes w/o wheat. or you can improvise wheat with non-wheat powder
