Anyone have a sugar free whole wheat bread recipe?
I need a recipe for the breadmaker that uses only whole grain flour and no sugar or sugar substitutes. I guess it would have to have some kind of fruit or fruit juice in it so the yeast could work. Anyone have a recipe? Thanks!

The following recipe is for a 1.5-pound loaf:
300g whole wheat flour (approx 3 cups)
225g water (9-ounces, or 1 + 1/8 cup) (or milk)
30g shortening or lard (approx 1-ounce or 1/8 cup)
(if you use oil, only use 15g - approx 1Tbsp)
6g salt (approx 1 tsp)
6g yeast (approx 1.5 tsp)
Note: if you use whole wheat bread flour, you may need to add another tablespoon or two of water. Check the doughball after the machine has kneaded for 5 or so minutes, it should be stickier than you are used to with white dough, but still maintain a proper doughball.
As is, this will produce a nice "peasant loaf" which is slightly bitter due to the tannin in the red wheat bran. You can add up to 30g of sweetener of your choice to ward off the bitterness. Honey works well, but you can also use molasses, fructose sugar, maple syrup, or whatever you have been told is acceptable. I have been experimenting with blue agave syrup lately, it is supposed to have a low glycemic index (according to the label), tastes very neutral, and is as sweet as honey.

Whole wheat is not gluten free but here is the only bread I make in my bread machine. The orders in this household is not to make any other recipes in the bread machine. But I do experiment any way. 12 GRAIN WHOLE WHEAT PLUS BREAD FOR BREAD MACHINE 2 POUND LOAF Warm Water1 1/2 Cups (12 oz) Honey3 Tbsp. Bread Yeast2 tsp. Dissolve yeast and honey in warm water and let stand for 10 minutes. Oil1 Tbsp. Lemon Juice1 tsp. Egg 1 Add oil, egg and lemon juice to liquid mixture. Mix. Pour into bread machine. ADD Whole Wheat flour2 1/2 cups 12 Grain Bread Mix1 1/2 cups Potato Flakes 1Tbsp. Skim Milk Powder 1Tbsp. Salt 1 tsp. I select Whole Wheat, light crust and 2 pound loaf Replace the 12 grain with whole wheat for a complete whole wheat loaf, but also use 2 Tbsp of potato flakes and milk powder White Bread Use the same liquid recipe except change quantities Honey2 Tbsp. Might need to reduce yeast to 1 ½ tsp. If it raises to high Rest of liquid stays the same Dry ingredients Potato Flakes2 Tbsp. Skim Milk Powder2 Tbsp. Salt1 ½ tsp. Use normal white bread setting for 2 pounds. One of the best white bread loaves. Works just as well for a 50/50 loaf. 2 cups of whole wheat and 2 cups white Because of the egg you have to make it right away, cannot use delay time. For a 1 1/2 pound loaf just reduce the water, honey and yeast down.

I am a former chef and I use honey for WW bread and others, and in other I use barley malt syrup.
