What's the trick to rehydrating beans?

I usually just boil dry beans with water, and they turn out fine. However, the skins of the beans tend to "boil off." What is the best way to cook them and have the skins stay on the beans?

    you might need to stop the cooking process a bit earlier although I have noticed that not all variety of beans do this and even in the same pot, not all beans do it. It may have nothing to do with the cooking process and everything to do with growing conditions or something like that. I just made a pot of pinto beans that did not do it at all but the navy beans I cooked last week boiled right out of thier little skins.
