I'm making broccoli cheese cornbread?

I was wondering if I could use lite cheddar cheese or Velveeta/American cheese instead of cheddar cheese?

    Yes. Any cheese will work. It is always better to use a good cheese.

    But, it is up to the person making the bread as to what is used. Just make sure your pan is greased really well. Cheese has a habit of sticking. Also get it out of the pan as soon as possible. Put on wax paper or wooden cutting board. Watch out that you don't get burnt.

    Cheese is really hot. Try not to get it on you.

    You could use light cheddar, but I wouldn't use American/Velveeta. I am not big fan of the processed cheese flavor. Cheddar has a that sharp flavor which is delicious in dishes.

    Lite cheddar will be your best bet... the velveeta/american will be too lose in consistancy to use for baking this. Hope this helps.
