What is this animal called?
I just got back from a trip to the yucatan peninsula. There were these little brown animals about the size of a possum running around our resort property. They ate by holding food in their front paws. Looked like rodents but staff said they were related to the pig family. Started with the letter "C". Any ideas?

I think you probably saw an agouti. These are prevalent in the resorts. A coatimundi looks somewhat like a raccoon. But the agoutis look more like the rodents you describe - a friend of mine calls them "garden rats."

Collared Anteaters
Undoubtedly Costa Rica's oddest entity, the collared anteater (Tamandua mexicana) is a cat-sized creature with a nose
even larger than Barbara Streisand's. Locally, they are called the tamandua or oso hormiguero, which literal& translates
to "the bear who hunts ants," but the ante themselves probably refer to them simply as "the grim reaper."
