I believe most allergies are genetic or being exposed to certain foods to young. I've heard that if you start feeding your baby cereal to young (prior to 6 months) then there is a higher chance of him developing food allergies. There are also certain foods you shouldn't allow your baby to have before he is 12 months because of the risk of developing an allergy, such as honey, cow's milk, and peanut butter. And lastly, if you or your spouse have a severe allergy to something, you need to try not to expose your baby to that until he is 3-4 years old.

Unfortunately, there is no real answer to this... just a lot of theory. One thing that seems to be apparent is how allergies usually seem to run through families -- but not always. My father in law is deathly allergic to nuts and oats, but my husband is not allergic to any foods.

The safest course of action is to slowly introduce your baby to new foods and pay close attention to him or her. If there is a reaction, remove the food and see if it goes away. If there is a severe reaction, of course, you go to the hospital.
