Question about Red Beets?
im about to try a new veggie....the red beet....im kinda afraid because i've never really liked vegetables and im slowly incorporating them in my new diet....i ate beet once when i was little and i was so disgusted and never tried it again! This year is a different story...i want to eat healthier...so i wanna know if it;s better to eat it raw or cooked? i noticed it bleeds so much and im not sure if the stains can become permanent....ok..so its a boring question but i had to ask it....LOL
if i juice them do i have to peel it? and what about the stems? do you eat those too?

I like beets roasted! Get them fresh, not out of a can. Scrub them well and cut them into slices or chunks. Take a big sheet of aluminum foil and lay half of it a roasting pan, put the beets on top of it and brush them with plenty of olive oil. Fold the other half of the aluminum foil over the beets and bake at 375 degrees for 30-45 minutes depending how cooked you want them. You can add salt, spices, and other vegetables (I like to roast beets with potatoes, turnips, carrots, onion and garlic).

I have cooked my fresh beets and am ready to prepare pickling solution. I have always put beets and solution in a jar and put in hot water bath to cook for approx. 30 minutes. Why do I need to cook them in the jars. Can I put them in a jar, pour hot pickling solution over them and put lid and ring on jar and be finished with them?

I love beets! lol. The best way to eat them on a salad or right out of the can if they are pickled beets of course. Yum

They are good raw or cooked - try roasting them as you do other vegetables
If you juice them you can either leave the skins on (but scrub them well) or peel them - but do as Cristina does and mix the juice with carrot and apple juice. On its own beetroot juice is bitter and muddy tasting, and to many people undrinkable. Mixed with carrot and apple it's delicious

the stains can be permanent, I like them cooked with vinegar and sugar. also in my salads and i juice them with carrots and apples raw. there are some web sites that you punch in what ever ingredients you have and it will tell you what you can make a meal with it.
