    I am in Brookshire,Tx and we start our potatoes and onions at the beginning of February.And,technically,you're supposed to wait until the danger of the last frost(late March or so)to plant your squash,tomatoes,corn,okra,peas,beans.The best time for greens,such as collards,is in the fall,say late Sept.We start all from seed except for the onions,which we buy in sets from the nursery,and tomato plants.Good luck.It really is a process of trial and error.We have years of gardening behind us and before us.And make some compost,it works wonders.Also,add bloodmeal and chicken manure when you till. We've also added "triple 13 " fertilizer last time and our garden was awesome.We've had great luck with everything I just mentioned.

    You always save money by starting veggies from seeds. I live in Oregon, so have no idea of what veg. works in Texas, but you can start seeds indoors anytime now, since you won't be putting them out for at least 6 weeks, after frost danger has past. Direct outdoor planting could be carrots, beets, lettuce, broccoli. Watermelon and melons, peppers and tomatos probably are choice crops for your area. the link below has specfic info for texas.

    There are many healthy fruits and vegetables. Fruit and vegetables like broccoli and green spinach contain calcium and are packed with fiber.
