Getting health department approval can sometimes take longer than expected. I knew someone who's approval took 2 months - after they were set up - so they were paying rent, utilities, etc. with no income.

Can you cook? Do your friends like your cooking? Call the local licensing agency for the cost of the business license. Call an insurance broker the the cost of the business insurance. Call the local newspaper and yellow pages for the cost of advertising. All of this should be done as you put together your business plan. Good Luck!
Pitfalls? Lack of business, under capitalized, employee problems.

read this carefully;
having your own biz is a wonderful idea. UNLESS you have
worked in the biz /industry for 1-3 yrs previous, NEVER open a biz
that you do not know backwards and forwards.
also, restaurants have the highest failure rate.
find others who have experience and passion for specific biz
and a great biz plan and help THEM open their own biz
and learn from them as a whatever, and get promoted to asst
mgr or gen manager and when you find distinct ways to
do better what your boss is doing,....or find a fantastic
deal, then, exploit it.........but with an 85% failure rate in the
first year, get everything going for you first.
I will guide you if you wish on a limited basis free.

There should be a hospitality association in your region that can help with all your questions. Most are called "restaurant and hotel" associations. I own my own restaurant in Ontario Canada and we have numerous groups like the Canadian Restaurant and Food Association and the Ontario Hotel and Restaurant Association.
