There's a large amount of each ingredient in this recipe, do you think they are talking about 1 rib of celery?

or the whole bunch? 1 whole bunch seems like a lot of celery but so does 1 (16 oz.) jar of green olives & 5 bunches of green onions. Also, I wonder if those artichoke hearts need to be chopped or quartered or what?

2 boxes Uncle Ben's Wild Rice mix, original flavor not quick cook & prepared according to package directions except omit butter & reduce water by 1/3.

1 (16 oz.) jar green olives, chopped

2 cans artichoke hearts in water, not marinated

5 bunches green onions, chopped

1 whole stalk celery, chopped

1 can sliced water chestnuts

Mix together with 2 cups of mayonnaise.

Update:

This is a very large salad. I tried it about 15 yrs. ago & it was so good I asked for the ingredients - I was suprised. Never made it but think about it every now & then & thought I might take it to a BBQ next weekend in Texas. That Uncle Ben's Wild Rice mix is really good & tasty & I like almost anything with mayonnaise. Maybe it was all those green onions & olives that also made it tasty. Had a nice crunchy texture also with the celery, bell pepper & water chestnuts. The more I think about it, it must have been just 1 stalk or rib of celery. Not a rude question. This was brought to my Mardi Gras boat parade party here in Louisiana & I can remember it tasting so good. Maybe I was just hungry, we'll see.

    I like your recipe it sounds extremely good, i have to try it. I would make the salad starting with the rice as explained in the directions, then add the rest of the ingredients a little at a time until it "looks and tastes" good, but considering this is for a large amount of people, I am sure the directions are pretty close. as mentioned before, you have to adjust the recipe to your needs as with the artichokes and scallions. 5 bunches of scallions maybe a bit much but it depends on how many scallions come in a bunch. sometimes as few as 3-4 or sometimes as much as 5-8....For the celery I would make 1/2- a bunch at a time to see if it is enough or not... it also depends if you cut the veggies very small or on the chunky side as to how much you might need, or looks like enough. this is one of those recipes where you just have to play it by ear( and eye.)..hope it turns out well..

    I'm not trying to be rude, but where is the flavor in this? I hope there is more to the recipe than what you posted here. I would say the answer to your question is a whole stalk or bunch as you call it. A rib is a single piece of celery. It is a lot of celery but this sounds like it's made for 10-12 or more. What is the name of this recipe? Is it supposed to be a cold rice salad?

    I am not a huge fan of celery, so even if it was for a "whole" celery bunch, I wouldn't use it all. I'd only use a few stalks. Remember, new recipes are made by people making changes in old recipes. My suggestion to you is make it however you want. Then you can add or subtract celery to your liking the next time around.

    Once I made a chicken Cesar salad stuffed pita. It holds like a sandwich and its easy to make. All you have to do is grill some chicken breast then gather Caesar salad dressing, lettuce, Parmesan cheese and maybe some cherry tomato's. Mix up the salad, cut the pitas in half and stuff with the salad. Its sooo good!

    A stalk is just one piece of celery. - I would slice the artichoke hearts in half or in quarters

    It would be 1 rib of celery.

    For the artichokes, it would depend on your preference. If they are fairly large I would cut them in half. If they're on the smaller side, I would keep them whole.

    Yes they do, I think it's a lot too, you could do the recipe in half and see how it comes out!!
