new way to cook steak?

looking for a new way to cook an old favorite. What do you think?

    We usually charcoal grill our steak, but this is a great recipe for when you want to cook indoors. It seems "fancy" and will impress company, but is simple enough for a week night. Enjoy!

    Brandy Peppercorn Steak

    2 10oz New York Strip Steaks (or other pan size steak)

    3 T mixed peppercorns, ground

    2 cloves garlic, minced

    3 T whole grain mustard

    ¼ cup beef broth

    ¼ cup heavy cream

    ¼ cup Brandy

    Olive oil (to thinly coat skillet)

    Rub steaks with mustard. Mix garlic and peppercorns together and rub onto steaks. Sear steaks in a hot, oiled, skillet; 4-5 minutes. Flip steaks over. Add brandy and ignite (carefully). When flame goes out, remove steaks from pan. Add broth and cream to pan and simmer on low until reduced to a nice sauce. (it won't take long) Pour sauce over steaks and serve. You can add sautéed mushrooms to the sauce if desired.

    I usually give my steaks a dry rub of just a little seasoned salt, some cumin, a little garlic powder, and some onion powder. Then I grill it until it's medium rare and delicious :)

    I've tried a slightly different method lately: just putting seasoned salt on the steak (nothing else) and frying the outside of it real quick in butter and then grilling it, and it tastes delicious that way as well.
