Okay, It is cold and snowing again! Any good soup recipes?

I have daily migraine headaches. They just very in intensity. But when the barometer moves, it moves me and my head right to bed. Does any one have any really good flavorful soup recipes? I'm doing some better today so I think I would be able to spend some time up being productive. I would love to have a nummy soup for dinner. Any kind, as long as it isn't too spicy.

    If you want the easiest possible soup, get a carton of the low-sodium Swanson's chicken broth. Put it on the stove over low heat and add a clove or two of peeled garlic (you should take this out before serving if he's not a big garlic fan), a pinch of crushed red peppers (like you use on pizza) and (if you have it) a few slices of peeled fresh ginger root (also remove these before serving). You can also slice some baby carrots and add them. Let that simmer very lightly for 20 - 30 minutes. While it's heating through, cook some thin noodles or rice in a separate pot. Don't cook them in the broth -- it'll get cloudy. Drain the noodles or rice, then add to the broth just before serving. I make this when I'm feeling too rotten to cook -- it really clears my head.

    Here is a good soup that is really quick and easy.

    Thai Chicken Soup:

    Buy a few cans of chicken broth.

    Two chicken breasts (1 lb./boneless/skinless)

    Boil for a while (1/2 hr.), to cook the chix and get the broth even more flavorful.

    Add Chopped carrots/onions/celery.

    You can add 3 cups of water, as now you have more of a stock, since the other elements have flavored the broth.

    Take the breasts out and chop them into whatever size you want (usually to match the size of the veggies) and put back into the mix.

    Simmer on Medium heat for 1/2 hr-1hr.

    Add 3 tbs. of Sesame oil and

    the juice of a fresh squeezed large lemon.

    Season with oregano, salt and pepper.

    Serve topped with fresh-chopped cilantro.

    Warms you up, but is refreshing, and calming as well, and has Vit.C/Veggies/Warmth...all good for cold weather!

    A nice, but simple spin on reg. chix. soup. The sesame oil is great for stir-frys and other dishes you may want to add a different spin on and is always complimented by cilantro and lemon.

    Here is an easy hearty potato soup recipe I came up with. You can either add cheese to it or leave it as a cream of potato soup.

    Peel and cube 6-8 potatoes any kind.

    Boil in just enough water to cover

    Cook until tender.

    Do not pour water out.

    Lower heat to medium.

    Add 1/2 cup of margarine. Let melt into potato and water.

    Add 1 cup of milk.

    Add salt and pepper to taste.

    Things to add:

    Instant potato flakes to thicken

    Velveeta Cheese cubed

    Corn- frozen or canned

    Cubed ham

    So good on a cold day. Hope you like.

    Sausage and Kale soup would be great, Kale is good for migraine headaches also.

    Ingredients1 Tbsp olive oil

    1 lb bulk Italian Sausage, or 4 links, casings removed

    1 medium onion, diced

    1 clove garlic, minced

    1 carrot, chopped

    1 celery stalk, chopped

    1 15 oz can cannelini beans, drained and rinsed

    1 32 oz carton chicken broth(low-sodium)

    1 bunch kale, cleaned and chopped

    1 tsp thyme

    1/2 tsp red pepper flakes

    1 bay leaf

    Salt and pepper, to taste

    1 Tbsp red wine vinegar

    Method

    Brown sausage in oil. Add onion, carrot, celery and seasonings. Saute until vegetables are soft. Add garlic and saute 1 more minute. Add broth, beans, and kale. Bring to a boil, reduce heat and simmer, covered, for 1 hour. Add vinegar and simmer 5 minutes longer. Adjust seasoning, remove bay leaf and serve.

    Bless your heart! I hope you will soon be feeling better.

    When you feel better, go to your grocery store and stock up on lots of canned soups. They are delicious. Some you will need to add one can of water. Others will not need water. Be sure to read the directions on the cans.

    The canned stews are good too.

    Here is a recipe from one of my cyber friends:

    BLUMZ’ VEGETABLE SOUP

    1½ lbs. ground chuck*, browned & drained (I usually rinse mine in hot water after draining to get more of the fat out.)

    While meat is draining, Add 1 tablespoon oil to soup pot and stir in the following, cooking and stirring just a few minutes before adding cooked meat:

    1 large onion, chopped

    4 medium potatoes, cut in small cubes

    1-2 carrots, sliced thin or chopped (I shred – Lacy doesn’t like carrots)

    Stir in:

    Browned & drained ground beef

    1 package Knorr vegetable soup mix

    2 cans beef broth

    1 can petite cut tomatoes, undrained

    1 can green beans drained (I normally use French cut)

    1 can corn

    1 can tomato sauce**

    2-3 cans water

    To taste: salt, pepper, garlic powder,

    creole seasoning, parsley

    Simmer covered until all ingredients are tender and seasoned.

    Note: Vegetable amounts are variable – more or less of each is totally optional, and I often use vegetables that have been left over.

    * Recently added about 1/2 lb. of cooked and crumbled Italian sausage to the ground chuck after browning. It was great! (I make my own Italian sausage using ground turkey – YUM!)

    ** Occasionally I have used Manwich sauce in place of the tomato sauce.

    Pasta Fagioli

    * 2 stalks celery, chopped

    * 1 onion, chopped

    * 3 cloves garlic, minced

    * 2 teaspoons dried parsley

    * 1 teaspoon Italian seasoning

    * 1/4 teaspoon crushed red pepper flakes

    * salt to taste

    * 1 (14.5 ounce) can chicken broth

    * 2 medium tomatoes, peeled and chopped

    * 1 (8 ounce) can tomato sauce

    * 1/2 cup uncooked spinach pasta

    * 1 (15 ounce) can cannellini beans, with liquid

    1. In a large saucepan over medium heat, cook celery, onion, garlic, parsley, Italian seasoning, red pepper and salt until onion is translucent. Stir in chicken broth, tomatoes and tomato sauce, and simmer on low for 15 to 20 minutes.

    2. Add pasta and cook 10 minutes, until pasta is tender.

    3. Add undrained beans and mix well. Heat through. Serve with grated Parmesan cheese sprinkled on top.

    NAVY BEAN SOUP

    1 pkg dried navy beans

    1 ham bone

    1/2 medium onion - diced

    1 carrot - diced

    1 celery stalk - diced

    1 bay leaf

    black pepper to taste

    water

    Pour the dried navy beans into a pot (checking to make sure no rocks in with the beans). Cover with water and bring to the boil. Boil for 1 minute, cover, and turn off the heat. Let sit 1 hour. Then drain the beans and add more water to cover. Add all the rest to the pot and add more water to cover. Bring to a boil, turn the heat down to a simmer, and simmer for 1 1/2 hours - checking on it to make sure it has enough water to cover. About 15 minutes before done, remove the ham bone and take the meat off the bone, cutting it into small pieces. Add the pieces back to the pot and when the 15 minutes is done -serve with a nice side salad and crackers. Remove the bay leaf before serving.

    I also take slices of leftover ham, dice them, and add them in the last 15 minutes as well for a different dimension of flavor.

    SPLIT PEA SOUP

    1 pkg dried split peas

    1 ham bone

    1/2 medium onion - diced

    1 carrot - diced

    1 stalk celery - diced

    1 bay leaf

    black pepper to taste

    water

    Place everything in the pot and cover with the water. Bring to the boil, turn down the heat to a simmer and simmer for 1 hour, checking the water and stirring often to keep from sticking to the bottom of the pan. I add extra slices of ham to this as well. Remove the bay leaf before serving and serve with a nice side salad and crackers.

    Potato Soup!

    Dice a medium size potato into small brunoise

    chop an onion in the same cut

    one garlic clove minced

    chop bacon into cubes(as you like, any you like, or skip the bacon)

    Chop 2 tblspoons of parsley

    two tablspoons of butter

    heavy cream

    chicken broth

    grab a pot and put in the butter, once it melts a bit, throw in the garlic and the onuions. once those get nice and golden, thrown in the potato, after two minutes throw in the bacon and after two minutes pour in the chicken broth according to the consistancy you like your soup to be. let the pot boil until the potatoes are soft. then add the parsley and blend it. Once you blend it add as much heavy cream as you like and you should have a nice potato soup!
