-Drive the Road to Hana and stop along the way to hike in bamboo forests, wade in springs, play in waterfalls, see the Seven Sacred Pools and find Charles Lindbergh's gravesite.

-Drive through the towns of Paia and Maakawao, stop for breakfast or lunch and get out to some of the specialty gift shops and organic food stores

-See Kula lavender farm. Entrance is free, only buy something if you want from the gift shop or cafe but it's just beautiful to see hillsides of roving lavender

-Drive to the top of Mt. Haleakala and see the only place in the world where there are silversword plants (similar to yucca plants) which bloom once in their life and then die. You'll be above the clouds in heights and looking upon the richness of the red soil of volcanic ash. Wildlife and birds can be found as well.

-Drive through Lahaina, which is commercialized but there is a banyan tree which covers an entire city block and is really something to see

Hearts 808 covered most of the activities I would recommend. I'd also suggest driving to the top of Halaeakala (the extinct volcano in the middle of the island). If you can get the kids up early enough, watching the sunrise from the top is supposed to be spectacular. The Iao Valley is very scenic too, and there's no admission charge. While you're there, stop by the nearby Maui Tropical Plantation (also free), a very pretty tropical botanical garden.

I don't know how old your kids are but my 3 (ages at the time were 11, 13 and 16) enjoyed beach activities, surfing, snorkeling(rent gear at Snorkel Bob's) for the time you are there, very reasonable rates. Hanging out in Lahaina we all enjoyed, Drive to Hana (a must do) there is an Aquarium close to Lahaina, window shopping at the 'Whalers Village" outdoor Mall is alot of fun...located directly on Kaanapali Beach...there's the "Sugar Cane Train" great little trip, many different things to do! Aloha, Enjoy a hui ho!
