Convenient healthy meals for children?

I am a full-time student / working single mother. I need some helpful healthy convenient dinner meals that I could prepare for my kids. As of now, the most convenient thing for me is to stop by any drive through and pick up dinner. All of this processed steroid injected food is making my kids chubby.

    I don't go to work or school, but we are always busy. My husband works pretty long hours usually and I am usually driving the kids to auditions or rehearsals or lessons or performances or whatever, so we have learned how to eat healthy and fast. We eat a lot of pastas and salads. Salads are easy to put together, just throw some lettuce in a bowl, add all of you favorite vegetables, a little dressing, some cheese, and some grilled chicken. It is easy and delicious. While you are preparing the salad, you can be cooking the chicken, which is really easy. Same with pastas, it is super easy to boil some wate rand throw whole wheat pasta in. Then add some delicious sauce, vegetables, and maybe some meat. Put some whole wheat bread or vegetables on the side and you are set. I found that it is helpful to, whenever I have extra time, cut up veggies, portion things out, make sauces, etc, so that when i am ready to cook, it is as simple as possible. I also will make some frozen dishes like lasagna, freeze them, and pull them out to cook whenever I need to. You can throw veggies and meat in there to keep it healthy. We eat a lot of vegetables in our house, and fruit. When we are really short on time, I will put some grilled chicken or tukey on whole wheat bread and pile on the veggies. Then we grab some fruit and we are ready. We try to mix it up. The meals may not be as extravagant and interesting as they used to be, but we do what we can with our limited time to cook and prepare meals.

    Well, this isn't really a dinner in itself but if you take some large round tortillas cut the edges to make it square then spread some cream cheese on it, lay a piece of you child's favorite cheese and lunch meat and a little baby spinach then roll it up-it makes a great little sandwich...and they won't know the difference that it is healthy because it tastes really good. If you want to make it cute, you can cut the roll into 3rds then with a toothpick-pin a little pickle to the front of each roll and it will look like a little snail sandwich....that makes it kinda fun for the kids to eat! Hope you like it!

    I work away during the week so every Sunday I make all the meals for my 3 kids and my husband as I do not like giving them frozen proccessed food. This usually takes me about 3-4 hours (depends on the cooking time for each meal) I cook chilli, spag bol, casseroles (beef, sausage or chicken), curry (kids love it, not too hot though!), cottage pie, goulash (beef or pork)......the list is endless and you need alot of freezable containers and freezer space! My hubby loves it as he takes the meal out the night before to defrost and when he comes home all he has to cook is veg, potatoes, rice or pasta!! You just need to be organised and plan a week in advance, but luckily I love cooking at prefer to do this every Sunday to make sure my family have a well balanced diet

    id strongly recomend jaimie olivers most recent cook book, im a student myself and it has a section on 20min meals, easy pasta dishes etc which are healthy and easy and quick to make. then it also has some fancier meals for when you do have more time
