Most herring with the exception of salted herring are ready to eat, and are used more as an appetizer or canape, and all are either picked or prepared, you can rinse them but the flavour in in them, they are pickled with a brine and vinegar pickle, not the same acidic one that is used with ceviche which cooks with acid, more a preserving brine.
You can serve it with onions, sour cream diced pickles and on a lettuce leaf for a pre dinner course, slice it into pieces and marinate it with the same ingredients for a cocktail style one like shrimps, even cut it into piece and put in on toast points with cream cheese, dill onions and a slice of dill pickle for a canape.

All you need to do with Matjas herring is buy a package of crackers or Kichels sit down eat them together and a great way to wash it down is with a shot of scotch or bourbon. It does wonders just try it.
