Fry 1 lb of sausage, drain, reserve 3-4 tablespoons of fat. Set sausage aside.

Put fat back in pan, add 3-4 tablespoons of flour, cook for a minute or so. Slowly add 2 cups of milk, stirring constantly. Season with salt, pepper and sage. Boil til thick. Add sausage back in. Serve.

You can use more flour if you like thicker gravy.

You have to get the sausage hot first.

Beat it slowly and smoothly, moving to a faster pace.

    You'll know when it's done.
