Fresh asparagus.......................................?

I have never cooked fresh asparagus before. Usually get the frozen stuff which is good.

I'm sure it's rather easy to do. So can you tell me an easy way of cooking fresh asparagus? And what seasonings do you use on it?

Oh, and when you buy fresh asparagus, how long does it last before I'd have to cook it?

    We grow our own asparagus, so I just keep it in a plastic bag in fridge until I have enough for a mess. Usually 3 or 4 days at the start of the season. Snap the asparagus with both hand until it snaps. Towards the bottom of the stem it will just bend. Too tough. Throw bottom part away. No need to peel the rest of it. Break into bite size pieces about 2" long & place on a baking sheet. Place slivers of onions on top . Drizzle with about 2 - 3 Tbls. Olive Oil. Then sprinkle with Chicken seasoning. Not the powdery kind. I use Montreal or Quebec. If you have a small roaster oven, use it & bake it on 4oo degrees. for about 20 min. Very good!!!

    Once you've purchased it, keep it standing up in water (a large glass works well) And use it within a couple days.

    To cook it, steaming works best (if you have a steamer) and you want to cook it just unitl it's bright green in colour- don't want it to get too soft.

    Also important is if it's fairly large, sometimes the bottom of the stems has a rather wood-like texture. You can chop it off, or peel the skin off the bottom 2-3 inches.

    As for seasonings, I don't usually put anything on it- I like it just plain! :)

    A bit of lemon might be nice though

    My culinary rule is that asparagus never touch water, in other words, never put it in water. You can steam if, but I prefer to roast it

    Snap the aspargus and put the top half on a baking sheet. Drizzle lightly with vegetable oil and sprinkle with kosher salt. Roast at 375 for 9 to 11 minutes.

    Fresh asparagus will last in the refrigerator for 3 to 4 days. Store them in the refrigerator in a glass filled half full with water (remove the rubber band on the bottom of the bunch)

    It doesn't last long out of water so cook it within a day. Just break off the ends (bend the spear, it will break on its own). I steam mine for about 12 minutes and make a nice Bechamel sauce to go with it.

    I've learned you have to use it fairly quickly...within two days when it's fresh. The soft tips tend to rot really quickly.

    It's great steamed, but I also like it grilled. I love asparagus for its flavor, and don't add much seasoning. Probably one of my favorite veggies of all time!

    I would use your asparagus the day you buy it.

    When I cook asparagus, I put it on the grill in one of those disposable aluminum pans with extra virgin olive oil, garlic powder, salt and pepper.

    Its done when the spears are slightly curved when you pick it up with tongs.

    everyone has great helpful ideas to cook it. I just thought I would add that I like to put parmesan on mine when its done.
