What are some good side-dish ideas to go with a oven-roasted boston-butt?

I am preparing an oven-roasted boston-butt pork roast and have drawn a blank on decent side dishes. I don't want to serve the usual corn-on-the-cob and potatoes. Thanks!!!

    Potatoes au gratin would be great. We also serve chunky applesauce (just the kind in a jar) with pork. And don't forget hot rolls or bread with lots of real butter. I am a bread and butter addict, but especially so with any roasted meat.

    I usually serve mac and cheese or BBQ baked beans and a veggie with Boston butt roast (I serve it as pulled pork and offer a choice of BBQ sauces).

    My favorite mac and cheese:

    MACARONI AND CHEESE 1928 VERSION

    16 ounces elbow macaroni

    24 ounces Cheddar cheese block, sliced or grated

    6 Tablespoons butter

    about 2 teaspoons salt

    1/4 teaspoon pepper

    1 1/2 cup milk

    3 eggs

    Boil macaroni in salted water, following package directions. Drain under running cold water. Cover bottom of a 13x9x2" baking dish with 1/3 of the macaroni, then a layer with 1/3 of the bits of butter, and 1/3 of the salt and pepper, then 1/3 of the cheese.

    Continue layers until all ingredients are used, ending with a cheese layer.

    Whisk milk and eggs together, pour over the top, and bake in a 350° oven for 35 to 45 minutes, until browned and cooked through.

    Serves 6 to 8 (main dish servings)

    Squash is currently in season. You could do a medley of yellow squash, zucchini and onion (I sautee mine in butter with salt, pepper and dill).

    If you're unsure how to make BBQ baked beans, Cooks.com has many recipes to choose from. For BBQ baked beans, I usually add ketchup, yellow mustard, brown sugar, salt and pepper to Pork and Beans; but I don't follow a recipe, I just taste it as I go and adjust the flavor that way.

    Baked beans. Deviled or pickled eggs. Potato Salad. Coleslaw. Pickle trays. Cheese Trays. Veggie Trays. All are great for feeding a large crowd and can be prebought or made in advance.

    If you're going with BBQ flavor, you can't go wrong with baked beans and cole slaw. If you're just doing a plain roast, I suggest fried apples and stuffing (I usually make mine with whole wheat bread, cranberries, and walnuts).

    Boiled Cabbage.

    Boiled Carrots.

    Coleslaw. & Salad.

    Chips (fries) or wedges [potato cut into wedges and coated with herbs]

    Rice.

    Fruits have sugar, it's natural, but some fruits can even be bad for you. Veggies are a lot healthier, particularly the green ones.

    Fruits are sweeter and take less effort to organize, generally, so I tend to eat more fruits. Unless we could talking caned, but still, you usually heat up the veggies, so another vote for fruit.

    potato salad, fruit salad, low fat jello works for diabetics and kids won't know the difference. hot tea, salad, hamburgers not everyone likes hot dogs. cheese and cracker tray that seems to be popular with the kids and adults. fruit tray-grapes, strawberries, cherries, cantaloupe, watermelon.
