On the iPod page, under the options, click disable Auto Sync

Doesn't matter whether you have iTunes or not, it should only erase if you restore it to factory settings, or if you have music on it, then try to sync it with a computer that has no music on it at all. Th thing about iTunes is, well, it mirrors it's library with your iPods library. If you have, let's say 20 GB on it, and you sync it with a computer that has only 5 MB, your 20 GB of music will be erased, and REPLACED with the 5 MB. I have a 30 GB iPod, and it has never gotten erased once by iTunes, except when I tried to sync it with Vista RC1. That was not good at all, that erased my iPod because it restarted it every 5 seconds while my iPod was plugged in, therefore corrupting and destroying the data.

When the iPod page pops up when your iPod is synced underneath the info there are some checkboxes. One of them says manual sync or do not auto sync. Check this box and hit the Apply button thats in the lower right hand corner.
