    Margarita Shrimp

    2 cups yellow onions, finely diced

    1/2 cup garlic, chopped

    1 1/4 cups lime juice

    3 ounces triple sec

    5 ounces tequila

    4 ounces butter

    1/2 tablespoon coriander, ground

    3 tablespoons fresh cilantro, medium diced

    1/2 cup poblano peppers, medium diced

    1 1/2 tablespoons cornstarch

    1 ounce water

    36 medium shrimp, sautéed in butter

    Sauté onions and garlic until tender. In saucepan, add lime juice, triple sec and tequila and simmer for about 5 minutes. Melt butter slowly and stir in ground coriander.

    Combine all ingredients in saucepan and thicken with cornstarch and water. Top cooked shrimp with the mixture.

    Shrimp Scampi

    1 cup white wine

    1/2 cup unsalted butter, melted (do not use margarine)

    3 tablespoons minced garlic

    1 pound shrimp, peeled and deveined

    Paprika

    Parsley flakes

    Mix the wine, butter and garlic together and pour over the shrimp. Sprinkle with paprika and parsley flakes.

    Bake in a 350 degree F oven for about 6 to 7 minutes.

    Be careful not to overcook the shrimp.

    The shrimp is done when it has turned pink.

    Based on Joe's Crab Shack Coconut Shrimp

    This is a tasty treat. This is one of our favorite ways in frying shrimp. Don't forget the sauce.

    Serves 4

    1 lb Medium - Large Fresh Shrimp (cleaned, shelled, and butterflied)

    2 Eggs

    1/4 C. Water

    2/3 C. Corn Starch

    7 oz. Package of Premium Flaked Coconut (small flake if possible)

    1 Tbsp. Sugar

    1 tsp. Salt

    1/2 C. Flour

    Mix eggs and water. Set aside. Place 1/3 cup of corn starch in bowl for dusting of shrimp. Mix in separate bowl 1/3 cup (the remainder) of corn starch, coconut, sugar, salt, and flour, blend well.

    Heat oil for deep frying. Roll shrimp in corn starch, then in egg wash, then finally roll in coconut mixture. Place shrimp in hot oil and deep fry until done. Shrimp will float to the top when cooked.

    Take care not to overcook shrimp.

    Serve with sauce (below).

    Note: We have found the results to be slightly better when you process the coconut in a blender for a few seconds. It will grate up the coconut just a bit more.

    Pineapple Dipping Sauce

    1 (8 oz.) Can Crushed Pineapple Natural Juice (do not drain, add juice)

    1/2 C. Sugar

    1/4 C. Red Plum Preserves

    1/2 C. Sweet and Sour Sauce ( the yellow type not the red sauce, we used Kraft Sweet and Sour Sauce)

    Place all in a sauce pan and simmer on medium low to low heat for 20 - 25 minutes stirring frequently until mixture thickens slightly.

    We find this sauce is great with Coconut Shrimp and it goes well with Chicken Nuggets.

    Shrimp Curry

    Serve this shrimp curry with hot cooked rice and a salad for a complete meal.

    2 pounds uncooked shrimps in shells

    Salt

    1/2 cup butter or margarine

    1 small onion, thinly sliced

    1 clove garlic

    2 tablespoons curry powder

    1 cup pineapple juice

    Pepper and paprika

    1/2 teaspoon ground ginger

    2 carrots, thinly sliced

    1 celery rib, thinly sliced

    2 tablespoons cornstarch

    2 tablespoons lemon juice

    hot cooked rice

    Preparation:

    Cook shrimp in boiling salted water to cover just until they turn pink. Drain, reserving 3 cups liquid.

    Remove shells from shrimp and devein. Heat butter or margarine in heavy skillet until it begins to bubble.

    Lightly brown onion and garlic in the butter; remove. Fry curry powder in the butter until deep brown.

    Add the 3 cups of reserved shrimp liquid, pineapple juice, seasonings, and sliced vegetables. Mix cornstarch with a little water until smooth. Add to mixture.

    Simmer 15 minutes, stirring occasionally. Add shrimp and heat through. Stir in lemon juice. Serve with hot cooked rice.

    Shrimp curry recipe serves 4 to 6.

    YUM, shrimp red curry.

    I just made some. It's a really yummy and easy Thai dish. Just get Thai kitchen red curry paste from a grocery store, 1 can of light coconut milk, half a green, orange and red bell pepper.

    Cut each half of bell pepper into thin strips. Put three spoons of the curry paste into a wok or a skillet and let it heat up for a minute. Then put the coconut milk and peppers in with it. Bring it to a boil and simmer for 10 minutes. You can add shrimp right away or TOFU! YUM! Serve with steamed rice.

    I personally like plain old shrimp alfredo. Not exciting, but delicious!

    * 1 cup grated fresh parmesan

    * 1 cup milk or heavy cream

    * 1 tbsp butter

    * 1 tsp cornstarch

    * 1 packet fresh fettucini noodles

    * 1 cup cooked shrimp or shrimp and cooked veggies of your choice

    Heat the milk and butter. Add salt and pepper to taste. Mix the cornstarch with water; when the milk simmers, add the cornstarch and whisk for 1 full minute. Remove from heat; add the grated parmesan and whisk for another minute (removing from heat prevents a grainy sauce).

    Cook your noodles and drain. Mix it with the sauce and your veg/shrimp. Eat.

    2lb shrimp (26-30 ct)

    2 limes, juiced

    4 tbsp tequila

    1-2 cloves minced garlic

    salt and pepper

    mix all and let marinate for about 2 hours. Skewer on metal skewers and grill for about 5 minutes each side. serve in tacos or over rice...or plain! YUM!

    undemanding Shrimp Skillet a million Tbsp. oil 2 cups sliced zucchini (about 2 small) a million/2 lb. frozen tremendous shrimp, thawed a million cup (about a million/2 of 14-a million/2-oz.. can) diced tomatoes, undrained 2 Tbsp sunlight-Dried Tomato French dressing Dressing a million/2 cup classic Crumbled Feta Cheese a million cup raw prompt white rice, prepared as directed on kit warmth oil in nonstick skillet on medium-extreme warmth. upload zucchini; cook a million min. upload shrimp; cook till shrimp turn red, stirring on occasion. STIR in tomatoes with their liquid and the dressing. cook on low warmth till heated with the help of. Sprinkle with cheese. SPOON over cooked rice. Sprinkle with chopped clean parsley, if wanted. Bon Appetit!

    I buy this seafood mix that I put the shrimp in and shake it up, its like flour and then I put it in the deep fryer and it turns out so crispy and good =)

    grill grill grill!

    any grilled shrimp is AWESOME.

    undercook them on the grill though, because they will continue to cook off the grill and then you'll have over-cooked shrimp (yuck) if you dont pull them off early enough

    keep it simple:

    garlic, olive oil, salt, pepper, maybe lemon or lime juice

    and baste while their grilling (maybe marinate before for intense flavor)
