I believe the bladder is used to hold water...similar to a CamelBak, which is a backpack that holds water, which you can drink out of. It seems to me the bladder serves the same purpose for long hikes.

the bladder pocket is for putting in a full hydration bladder, so you will be able to drink the contents while hiking. if it doesn't come with a bladder you can buy one at any proper sporting goods store they will run between 15- 40 dollars depending on what size you buy, and what name brand it is.
you can fill them with ice and water, gatorade, or what ever sports drink you wish. just make sure you wash out the bladder after each hike especially if you fill it with gatorade.
good luck to you and your gran, and enjoy your hiking!
