What is wrong with my Jeep/coolant system?
About a week ago my check engine light came on, however my mechanic was out of town so I have been waiting to see him. Over the week there was really no noticeable issues at all except that every time i would start my Jeep up, hot or cold, the engine would rev up to around 2000 RPM's, which is much higher than usual. The other weird thing is I checked all my fluids 2 or 3 days ago, and everything was at a good level, including the coolant.
The same day the check engine light went off with nothing changing, same start up issue, ran just fine. Now yesterday with the check engine light still off my temp gauge was in the red after just a short trip to the center of town (2 miles total). So I thought that must mean the thermostat had gone bad. Now today the computer inside told me my coolant was low. So when I got home I checked and it was almost empty! I can't spot any leaks, and the ground was still wet from rain under my Jeep so I couldn't tell if it had leaked onto the ground or not.
So now I'm totally confused as to how I can lose all my coolant within a 3 day period, why it revs too high on start-up, and why the check engine light was on, and has now been off for 2 or 3 days without having done anything to it.
Anyone have any insight or thoughts?
For the record I drive a:
2002 Jeep Grand Cherokee, Overland Package
8cyl engine, 4.7 liters i believe.

Sounds like you definitely have a leak somewhere. Could be on the radiator or the coolant hoses. Since its raining outside then it will definitely be hard to detect any puddles. Don't drive it around until your mechanic gets back. An overheated engine will definitely cause some very expensive unnecessary repairs (warped cylinder head, blown head gasket, etc).

Could be a leaking water pump. Hopefully, it is NOT a head gasket. Does your car create any unusual smoke from the tailpipe when it is COLD??? As far as your idle problem, find an Amzoil distributor in your area and purchase the Amzoil spray engine defoamer/cleaner. It is usually used to clean carburettors, but it works GREAT on throttle bodies and IDLE AIR CONTROL VALVES. Use your VECI map to figure out where these things are, and clean them to SHOWROOM condition. This should solve most of your problems, unless your check engine light is on. If it is, have Auto Zone scan your engine computer for trouble codes (free service). This will point you in the right direction. Good Luck!!
