When The Stars Go Blue by Ryan Adams - maybe seven chords

Ramblin' Man by The Allman Brothers - VERY easy & fun to play

Sweet Home Alabama by Lynyrd Skynyrd - also easy

If You Could Read My Mind by Gordon Lightfoot - simple but you need to be able to fingerpick.

Comes A Time by Neil Young - I think six chords, easy strum

Thank You by Led Zeppelin - easy to play
