Gluten Free Yellow Cake?

I am baking a cake in the morning for a cookout tomorrow evening. My cousin's boyfriend is coming to meet her family and I am going as well. I offered to make a delicious summer cake for dessert. I have little time so I chose this recipe also for how fast it is. Several minutes ago, my cousin called and said BTW, he has to eat a gluten-free diet. That is all wheat products, correct? So I guess I will have to make the cake part from scratch. Does anyone know how you do this? I happen to have rice flour if that helps but I pretty much need to stick with the yellow cake part of the recipe as I have all the ingredients for this recipe and no time to go shopping again.

Thank you, that is so great! One question. What is xanthan gum or where would they have that in the store?

    Everyone that has tried this cake has said that they don't know the difference between the gluten free kind and the regular kind! Hope it will help those with those dessert cravings who can't have gluten/wheat!

    Ingredients

    1 1/2 cups rice flour

    3/4 cup tapioca flour

    1 teaspoon salt

    1 teaspoon baking soda

    3 teaspoons baking powder

    1 teaspoon xanthan gum

    4 eggs

    1 1/4 cups white sugar

    2/3 cup mayonnaise

    1 cup milk

    2 teaspoons vanilla extract

    Directions

    1Preheat oven to 350 degrees

    2Grease and rice flour two 9-inch round cake pans.

    3Mix the white rice flour, tapioca flour, salt, baking soda, baking powder and xantham gum together and set aside.

    4Mix the eggs, sugar and mayonnaise until fluffy.

    5Add the flour mixture, milk and vanilla and mix well.

    6Spread the batter into the prepared pans.

    7Bake at 350 degrees for 25 minutes.

    8Cakes are done when they spring back when lightly touched.

    9Let cool completely and then frost with your favorite kind of frosting!

    Mix the eggs, sugar, and mayonnaise until fluffy. Add the flour mixture, milk and vanilla and mix well. Spread batter into the prepared pans.

    Bake at 350 degrees F (175 degrees C) for 25 minutes. Cakes are done when they spring back when lightly touched or when a toothpick inserted near the center comes out clean. Let cool completely then frost, if desired.

    Pamela's cake mix and frosting mix are pretty good. Whole Foods has other brands as well that are gluten free. You can also get gluten free baking mixes with the directions on the package that aren't specifically cake mixes. Good luck!

    I have heard that xanthan gum is very expensive especially when you only need a teeny amount. This info below came from foodsubs.com (the theasuraus of cooking).

    xanthan = xanthan gum Pronunciation: ZAN-thun Notes: Derived from corn sugar, xanthan gum is used as a thickener, stabilizer, and emulsifier. Substitutes: guar gum OR pre-gel starch

    I'd check with your local health food store, tell them what you're doing, and get their advice if they carry it. I believe the ratio is one to one but they'd know. Just something I picked up along the way.

    Take a look at the Namaste products. I recently made a chocolate cake from one of their gluten free mixes that was outstanding! If you have a Whole Foods Market near you, you can get both cake mix and frosting there. Good luck!
