Chicken ideas.....I have leftover smoked chicken....?
I have one whole and 1/2 chicken (cut-up) that was cooked in my bbq smoker.......what would you do with it to make a tasty meal for a family of four......

Make a pasta dish using a light white sauce. Add peas, mushrooms, asparagus, or any other vegetables. Cut the chicken in chunks and toss it into the sauce with the other ingredients. Place in a greased casserole dish. Add penne or some other fairly substantial pasta that has been cooked until it is al dente (toothy). Top with bread crumbs and parmesan cheese and heat at 350 degrees in the oven until the topping is golden brown and the sauce is bubbling.

Chicken Curry
boned chicken cut in bite sized pieces
1 small chopped bell pepper
1 small chopped onion
3 chopped hard boiled eggs
1 small pkg. coarse-chopped cashews
1 cup mayonnaise
1/2 t. salt
1/8 t. pepper
4 t. curry powder
4 T. lemon juice
Mix all ingredients in 2 qt. casserole dish.
Cook 20 mins. at 350 degrees.
Stir, then cook 20 minutes more.
Fold in 1 cup grated cheddar cheese and cook another 10 minutes.
Top with 1 and 1/2 cups crushed potato chips and brown.
Serve with jasmine rice and chutney.

CURRIED PEAR, PISTACHIO AND GRILLED CHICKEN SALAD
Use your leftover chicken from Saturday nights barbecue!
Pears have anti-oxidant and anti-carcinogen glutathione which help prevent high blood pressure and stroke.
6 cups mixed, washed and torn salad greens or spinach
3 large ripe Bartlett Pears, cored and sliced
1/2 cup golden raisins
1/2 cup shelled pistachio nuts
1/2 cup diced red bell pepper
1/2 small red onion, sliced
4 (4-oz) boneless, skinless grilled chicken breast fillets, chilled
CURRY-CHILE VINAIGRETTE
1/2 cup olive oil
1/4 cup white wine vinegar
1 tbsp sugar
1/2 tsp soy sauce
1 1/2 tsp curry powder
1 tsp dry mustard
1/4 tsp pepper
2 serrano chiles, stemmed, seeded and minced
Directions
Combine all dressing ingredients in a small bowl; whisk to blend.
Cover and refrigerate until ready to use.
To assemble salad, toss half of the dressing with the salad greens.
Divide evenly among 4 salad plates or bowls.
Top with pears, raisins, nuts, bell pepper and onion.
Slice each chicken breast into strips and lay over salad
Drizzle with remaining dressing.

take it off the bone, add some BBQ sauce and throw it in the crock pot. .It will make delicious bbq chicken sndwiches.
