Veggie Bean Burgers????
I made these veggie bean burgers tonight for dinner. The flavor was fantastic but the texture was not. They had no firmness, they oozed out of the bun as we tried to eat them. I've never made them before and am unsure what to use for a binder. Should I add some flour? An egg? Also if you have a great black bean burger recipe please feel free to share it!
2 cup(s) Home-Cooked Beans
2 tablespoon(s) light mayonnaise
1/3 cup(s) (loosely packed) fresh cilantro leaves
1 tablespoon(s) plain dried bread crumbs
1 teaspoon(s) ground cumin
1 teaspoon(s) cayenne pepper sauce
Salt
Nonstick cooking spray
1 tablespoon(s) olive oil
4 lettuce leaves
1 large tomato, cut into 4 slices
4 hamburger buns, split and toasted

Directions
1.In large bowl, with potato masher or fork, mash beans with mayonnaise until almost smooth (some lumps of beans should remain). Stir in cilantro leaves, bread crumbs, ground cumin, hot pepper sauce, and 1/4 teaspoon salt until well combined. Divide bean mixture in quarters; with lightly floured hands, shape each into a 3-inch round patty. Lightly spray both sides of each patty with nonstick cooking spray.
2.In 12-inch nonstick skillet, heat olive oil on medium 1 minute. Add bean patties, and cook about 10 minutes or until lightly browned on both sides and heated through.
3.Arrange lettuce and tomato slices on bottoms of buns; top with patties and bun tops.

I always use an egg in mine. I've tried using different liquids combined with more breadcrumbs, but the taste and texture are never as good. Maybe try an egg with another tbsp of breadcrumbs. I also cook them a little different. I use more oil, I fry them beyond lightly browned, and I pat them down with paper towels after them. I make sure that the outside is really crispy so they don't fall apart on the buns.

Black bean burgers are very tasty but no- they do not taste anything like meat. Morningstar Farms makes a great black bean burger (that they even serve at Chili's). It's a bit dry and a little bit spicy. Just imagine corn and beans mashed together- that's pretty much what it tastes like. Other good frozen veggie burgers are Boca Burgers, Amy's or Sunshine Burgers (which are the best cause they are made of veggies and not soy). Also, tofu is an acquired taste and your must learn how to prepare it in order to cook it properly (you want to press the water out before marinating, stir-frying or baking). I would look up recipes online to get ideas.

Try adding less mayo, or more bread crumbs until they reach a good consistency. Mayo is made of mostly oil and egg so it tends to make things very moist and mushy.

I would actually use some rolled oats, they add a nice texture and act as a binding agent.
I would also nix, the mayo (however that would be the vegan in me)
