There are loads of mods for pretty much every aspect of the game. You can find lots of good custom armour, weapons, companions, quests, houses, spells and lots of other game play changes plus a lot more

one mod that is a good one is the deadly reflex mod, it changes the combat in the game, it allows shield bashing, horseback fighting, decapitation, you can stagger enemies better your health affects how you fight etc

Another one is a mod that added needs of food water and sleep to your character so if you don't eat or drink you can get weak and eventually die, or if you don't rest you can start to imagine things and you abilities will be affected taking the role playing to another level

try downloading an "Make it pretty" oblivion pack from gamespot. It has a bunch of mods to do what the name of the pack does.
