Taco Salad

1 pound lean ground beef

1 tablespoon chili powder

1 head iceberg lettuce, chopped or shredded

1 bunch romaine lettuce, chopped

3 large tomatoes, diced

1 green bell pepper, diced

1 red bell pepper, diced

1 bunch green onions, chopped

1 (4 oz.) can jalapeno peppers or 3 to 4 fresh ones,

finely chopped

1 (15 oz.) can red kidney beans, drained

1 (15 oz.) can garbanzo beans, drained

1 (12 oz.) bag shredded Cheddar cheese, divided

2 (14.5 oz.) bags corn tortilla chips, crushed

2 cups Miracle Whip

1 cup ketchup

1 (1.25 ounce) package taco seasoning mix

Brown the beef, drain, season with chili powder and set aside to

cool.

Prepare the dressing by whisking the Miracle Whip, ketchup and

taco seasoning mix together in a small bowl.

In a large bowl, combine iceberg lettuce, romaine lettuce,

tomatoes, green pepper, red pepper, green onions, jalapeno peppers,

kidney beans, garbanzo beans, half of the cheese, half of the

crushed chips, dressing and cooled ground beef. Mix well, cover

and refrigerate.

Just before serving, top the salad with the other half of the

cheese and crushed chips. Serve with whole chips on the side.

Cold Taco Salad Recipe

My sister in law used to make a salad that was really good & easy.

Brown some hamburger and mix per the directions on the taco seasoning packet. Cool till just warm

Drain a can of kidney or black beans.

Chop a tomato or 2.

Add these to a good size bag of mixed lettuce greens and toss with a bottle of french or catalina dressing (I like the Catalina better).

Shake a bag of Frito's over the top & serve - it's really good and even a kid could make it.

COLD TACO SALAD

1 head lettuce, broken up

1 lg. tomato

1 lg. green pepper

2 c. grated Cheddar cheese

1 to 1 1/2 lbs. ground beef, cooked & cooled

1 (8 oz.) Catalina French dressing

1 bag Doritos nacho chips, broken up

1 sm. onion, chopped

Put all ingredients in large bowl and toss. Don't add dressing or Doritos until ready to serve. You may need to add more dressing or tomato, depending on size of lettuce head

OR

COLD TACO SALAD

1 lb. ground beef

1 (12 oz.) can kidney beans, don't drain

1 head lettuce

1 bottle French or Russian dressing

4 tomatoes

1 onion

4 oz. grated Cheddar cheese

1 lg. bag Nacho cheese Doritos or tortilla chips

Brown ground beef, drain; place in large bowl and cool. Stir in kidney beans. Chop lettuce, tomatoes and onion; mix with beef and bean mixture. Stir in grated cheese and mix all ingredients well. Chill a few hours before serving. When serving, crunch Doritos or chips and add to mixture, mixing well. Serves a crowd!

OR

TACO SALAD

1 lg. head lettuce

2 tomatoes

1 can (drained) kidney beans

3/4 lb. (drained) cooked ground beef, cold

Hunk of Cheddar cheese, hand grated

Doritos Nacho cheese corn chips

1/2-1 onion, optional

1 bottle Catalina French dressing (Sweet & Spicey)

Mix all ingredients. Saving tomato and chips until serving
