You can cover it really well and freeze it. If you do it in individual pieces you will be able to just take out a few pieces at a time.
I used to work at Chick Fil A and we made our chicken salad from left over chicken from sandwiches. We took all the breading off, washed it off very well and shredded it and made our chicken salad sandwiches.
I had some really good dip the other day made from chicken, a jar of salsa, and a container of sour cream. You could remove the breading from your chicken and tear it up for that.
You can also remove the breading and use the chicken for casseroles, soups, dips, etc
Good luck and enjoy your many chicken dishes the next few weeks!

If you could donate them, that'd be ideal.
To get the 'mileage' for your own family, though, separate the meat from the bone, gristle & skin, and use the meat for sandwiches (chopped fine, add a little mayo) or in a pasta dish with a nice yummy sauce (alfredo!)

pick it all off the bone and use in sandwiches and salads....you can sub it in recipes that call for ground beef.....if you can't use it all in a week (3-4 days if it has been in the fridge since the 4th) just freeze it in individual use portions and thaw as needed.
