Why is it so difficult to get good quality crisp red apples in SA?
I have to now buy green apples which are sometimes sour just to have a crisp apple.

Have you tried 'Pink Lady'? You can buy them at Pick'n'Pay and Woolies.
They are my favourite at the moment, not too big, red and very crisp. I hate it when apples are soft and all...

Red Delicious apples will get really mushy in an apple crisp. Granny Smith apples are used in baking for their texture and tartness. They stay fairly firm when baked. You could try making an apple crisp with the Red Delicious apples but it will probably turn out soft and runny. I definitely would not use orange juice to make it tarter. It will sweeten it more and add more liquid which you don't need. If you can wait a day to get some different apples, I'd really recommend doing that.

Personally I prefer the sour green apples.

All the good fruit gets exported - the locals have to be happy with what is left. It irritates the crap out of me that I actually have to go looking for a good quality apple.

To me, you are only guaranteed a chance at a crispy apple with a green one here. What can you do, one of many similar little inconveniences...
