Stock takes HOURS to make properly, and you will need at least 1 chicken carcass.

A lot of folks are saying to just use broth, and you can do that, but stock and broth are very different. Stock is made by simmering bones or carcass whereas a broth is from simmered meats. A stock will also have a much more velvety mouth feel, and a much more robust flavor from the gelatinized material that is rendered into it from the bones.

Your best bet at this point would be to buy a box of stock from the market. When you buy the stock check the package for the ingredients. Swanson makes a very good all natural stock.

Some packaged stocks (and broths) are made using a powdered base, and the flavor is noticeably different. If that is not a concern to you, or if that's what you like, you could also look into the OXO stock cubes. I don't care for them much, but they are convenient.

You can buy good quality stocks at the store these days. I would say get the low sodium kind if you can as some of them are too salty. The cubed and powdered kind are very salty.

I would say get this in a box or in a can if you have to.

If you want to make your own you can. Get some chicken bones, celery, carrots and onions. Cover with water, bring to a boil the turn down to a simmer and let simmer for about 4-5 hours or so. You will also need to skim of any scum of the top from time to time while cooking. Once cooked just strain and use or freeze.

It's sooo much trouble, and this close to dinner, I'd just buy Trader Joe's stock or Swanson's. You can get a low-sodium broth if you're salt-sensitive.

    So what are you making?

to make it take some chicken pieces , put in kettle add water to cover it up and boil until the chicken falls off the bone. you can add celery and other veggies too.you could use chicken broth from the store instead of the stock.

You do not have to. I always keep chicken and beef stock for those recipes. Get them at the grocery store, they are delicious

I recommend that you go and buy some chicken broth - either in campbell's soup can or swanson broth. Goodluck with dinner.
