Actually Apple usually doesn't lower prices of existing models when introducing new ones. They instead manage their production and inventory so that they pretty much run out of the old models at about the same time the new models are introduced.
As far as which is better, iPod classic vs. iPod touch, it comes down to cool factor vs. storage space. The iPod classic can hold many more songs and videos for the price, but on the other hand, the iPod has the cool touch screen and all those iPhone apps.
