For this application its fine. Its generally okay to substitute olive oil for vegetable oil. However, be cautious substituting vegetable for olive oil, the smoking points of these oils differ. Vegetable oil can generally be cooked at higher temperatures than Extra light olive oil, and extra light olive oil at higher temperatures than extra virgin. For a rice dish, its just a matter of taste.

It's perfect for almost everything, except desserts or any food where a light flavored oil is required. In that case use canola oil. you can also combine canola and olive oil for some recipes.

Note; keep all cooking oils in the fridge, as oils go rancid and develop a bitter taste when that happens.

Source(s): I do a lot of cooking and use olive oil and canola oils in almost every recipe calling for oil.

Olive Oil is vegetable oil. It's higher in "Good" fats. But it smokes at a lower temperature than most other oils and also imparts it's own flavor. You can probably use it ... but it depends. Try it and see? What's the worst that can happen...a little smoke.

Yes. Olive oil is just another vegetable oil, technically.

It can be used for baking, but unless you use a very MILD (i.e. light) olive oil you will notice the flavor in whatever you are making.

for cooking, but not for baking. you can't substitute it in like cake recipes, but for browning, saute, things you cook in a pan, yea it's better than vegetable oil
