Building out an exterioe wall.?

I am building a staircase and the cut-out through the floor will not allow me to drywall on the exterior wall studs. I need to frame a second wall against the existing exterior wall. Should I line up the studs and end up with a 7" wall? For fire blocking, Should I leave the existing drywall on the exterior wall and stud the new wall against that???

Update:

The Stairs are starting on the main (first) floor. Through a hole in the ceiling they will end on the second floor. The second floor joists are being double braced to allow for the stair rough opening. Due to the double bracing, the finished stair opening in the floor will be not in line with the existing vertical exterior wall. My thought is to double the wall thickness to match the doubled floor joist above. I hope this helps. I don't even understand what I said!

I am confused, a hole in the ceiling prevents you from applying drywall to the wall?

But you can somehow stud out the wall, like putting furring strips on it.
