Is there a way that I can save whole tomatoes from my garden for the winter months.?

I know that they can be canned in fruit jars, but I would like to keep them some other way for the winter months, when I tomato in the store costs almost one dollar and are tasteless.

    You can just rinse them and freeze them whole. Put in the fridge overnight to thaw. Let them sit on the counter for a couple of hours and the skins will peel right off. It's not like eating a fresh tomato, but the flavor is still very good and they are great for cooking with.

    I agree with what marmad said except that I weigh the tomatoes into one pound portions, skin them and then freeze them.

    When defrosted the tomatoes are no good for salads because they collapse but they're excellent for chillis, soups, bolognese sauce, etc, and because they're bagged into 1 lb portions it's easy to defrost just the amount you need.

    The other way I preserve cherry tomatoes is to cut them in half, part dry them in the oven and preserve them in olive oil flavoured with garlic and thyme, they;re really yummy.

    I asked a similar question to yours a couple of days ago and had some really good answers - sorry, I don't know how to post the link to the answers I got.

    If you're looking for a way to preserve the tomatoes whole so that they keep as if they were fresh then I really don't know the answer. I know that most of the major supermarkets irradiate their fruit and veg to keep it fresh for longer but there's obviously no way you could do this at home!

    Yes, freezing is the only answer. I peel my tomatoes, chop them and add a bit of sugar and sometimes some chilli too. I bag the 'sauce' in 500ml ziplocs or containers and stand them together in a box in the freezer until they are frozen and I can lay them flat. They are perfect for casseroles, soups, bolognaise sauce or home made pizzas. Defrost overnight in the refrigerator. The flavour tastes like they are fresh, I think it's the sugar.
