I do not eat tomato's?
Ok I do not cook with tomato's at all. What can I substitute for tomatoes in my cooking?

I don't eat tomatoes either.
If you can have other nightshades, you can sometimes substitute peppers for tomatoes. For example, a stew or a chili tastes great with ancho peppers. Ancho peppers are dried, so you need to soak them in hot water first, then you can cut them up or blend them and put them in your dish.
If you can't have peppers either, you have to get a little outside the realm of "substitution," but if you understand the function of tomatoes in a dish, you can make a new dish with ingredients that function the same way.
One of the main functions of tomatoes is to provide umami - a savory flavor. Anchovies, parmesan cheese, meat broth, roasted nuts, garlic, onions, mushrooms and seaweed are examples of other foods with umami flavor.
Sometimes tomatoes perform a thickening role. Just about any vegetable that can go in the blender will work, or depending on your application, you can use reduced broth, starch, ground up nuts, cream, cream cheese, or eggs.
Tomatoes also provide a little acidity. You can use lemon juice, vinegar, or sauerkraut for acidity.
Fresh or pickled beets might make an interesting substitute. Although they're quite different from tomatoes, they're red, have umami flavor and acidity (especially when pickled), and can go in the blender for thickening.

The acidity in the tomatoes could worry you. My grandmother has a hiatal hernia and had to resign acidy ttpe meals. uncertain with regard to the beer. attempt it as quickly as and notice if it is going ok. Or lgoogle extra information.
